Mexican Lasagna

Mexican Lasagna

I put refried beans on top of my layers of tortillas, I also added some green chilis to the top

UPDATE : ICKKK mushy ... I didnt like this one dont try it lol, the flavor was good but the mush from the corn tortillas ruined it Eeeek



INGREDIENTS (Nutrition)

* 1 pound lean ground beef
* 1 (1 ounce) package taco seasoning mix
* 1 (14 ounce) can peeled and diced tomatoes with juice
* 10 (6 inch) corn tortillas
* 1 cup prepared salsa
* 1/2 cup shredded Colby cheese




DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large skillet over medium-high heat, brown the ground beef, and stir in the taco seasoning and tomatoes. Line a 9x13-inch baking dish with half the tortillas. Spoon the beef mixture into the dish, then top with the remaining tortillas. Spread salsa over the tortillas and sprinkle with the cheese.
3. Bake at 350 degrees F (175 degrees C) for 20 to 30 minutes, or until cheese is melted and bubbly.

Saucy Broccoli Chicken over rice

Saucy Broccoli and Chicken on the stove
p.s I think this would be delicious served over noodles or even a baked potato

First How I did it, I didnt have curry powder :( So I used a little thyme and also about 6 splashes of Franks hot sauce, I didnt bake it at all, I steamed my veggies on the stove, drained them, added in my leftover chicken, soups, pepper, my other spices, mayo and lemon juice and heated it all through, then I added my 2 cups of grated cheese and melted that in. Then I added enough chicken broth to make a nice sauce. I saw no reason to dirty up a big casserole dish when I could do it on the stove, its SO yummy and I cant wait to serve it over rice tonight, hubby loves this yummy chickeny/cheesy sauce too, I did add in some frozen cauliflower and carrots too!

Saucy Brocoli and Chicken Bake

Description:

A casserole of tender broccoli with chunks of chicken, topped with a flavorful sauce and cheese, served over rice
Yield: 8 servings
Ingredients:

16 ounces frozen broccoli florets (or about 3 cups fresh broccoli florets)
3 cups cooked cubed chicken
pepper
2 cans cream of chicken soup*
1/2 cup mayonnaise
1 teaspoon lemon juice
1 teaspoon curry powder
1/2 cup chicken broth
paprika, optional
2 cups (8 ounces) shredded cheddar cheese
1 1/2 cups rice (uncooked measurement), cooked according to package instructions (should make 4 1/5 cups of cooked rice)
Instructions:

1. In covered saucepan, cook broccoli in water just until tender, about 5 minutes.

2. In greased 9 x 13 baking dish, spread broccoli across bottom and sprinkle chicken evenly on top. Generously sprinkle black pepper over chicken.

3. In mixing bowl, combine cream soups, mayonnaise, lemon juice, curry powder, and chicken broth, whisking until smooth. Pour over chicken. Sprinkle paprika on top if desired.

4. Bake uncovered at 375 degrees for 20-30 minutes or until hot and bubbly. Spread cheese on top and bake 5-10 minutes longer, until melted and slightly browned.

5. While casserole is baking, cook rice. Serve the chicken and broccoli mixture over hot rice.

Nestle Oatmeal Scotchies

1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup (2 sticks) butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract or grated peel of 1 orange
3 cups quick or old-fashioned oats
1 2/3 cups (11-oz. pkg.) Nestle Butterscotch Flavored Chips

Preaheat oven to 375° F. Combine flour, baking soda, salt and cinnamon in small bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl. Gradually beat in flour mixture. Stir in oats and morsels. Drop by rounded tablespoon onto ungreased baking sheets. BAKE for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

PAN COOKIE VARIATION: Grease 15 x 10-inch jelly-roll pan. Prepare dough as above. Spread into prepared pan. Bake for 18 to 22 minutes or until light brown. Cool completely in pan on wire rack. Makes 4 dozen bars.

Chicken Enchiladas


Chicken Enchiladas (American Style, not hot)

2 6oz cans chunk chicken (I had some precooked in the freezer)
1 10 3/4 oz Cream of Chicken Soup
1 16 oz tub Sour Cream
1 4 oz can mushrooms (drain)
1 4 oz can green chilis
1 2 1/4 oz can sliced olives
1 bunch green onions sliced (save some for top)
1 package (12) flour tortillas
grated cheese for the top (2 Cups)
garlic powder to taste

Mix all ingredients (except tortillas) in large bowl, fill flour tortillas (about 1/4 C per tortilla) with the filling, roll up and lay side by side in 9x13 casserole dish. Spread remaining filling over top of rolled tortillas, sprinkle with grated cheese on top (I use ALOT) and top with some green onions. Bake 350 degrees for 45 mins or until center is hot. YUMM

Dave's Roast



Well its Sunday and hubby is making a roast for dinner, here is the beginnings of it, will post an after pic and tell you how it was, Also Ill tell you how he prepared it etc..

Banana Cake


Banana Cake

1/2 C butter
1 1/2 C sugar
2 eggs beaten
2 C flour sifted
12 t salt
1/4 t baking powder
1/2 C milk
1/4 t vanilla
3/4 t baking soda (add to bananas)
3 bananas mashed

Frosting

1/2 stick butter (softened)
8 oz cream cheese
1 lb powdered sugar
2 t vanilla

grease and flour a 9x13 in ch pan
cook at 350 degrees for 35-40 mins

Sorry I dont have more detailed instructions, I wrote these down on a notepad because I dont have a printer and I cant remember where I originally found the recipe lol. Very tasty though

Moo Goo Gai Pan

This is quite tasty served on a bed of white rice. Just be sure to get all of your ingredients ready ahead of time as stir frying is quick and you won't have time to cut things in between.

I double this recipe, if you make it as stated it will serve 3 people, possibly 4. You can use any type of vegetable you like, just cut into thin slices. :)

Moo Goo Gai Pan

1/2 lb chicken, sliced thin
1 cup mushrooms, sliced
1 cup broccoli florets
1/4 cup chicken broth
2 tsp cornstarch
1 tsp sugar
1 clove garlic, minced
1 tbsp rice cooking wine
1 tbsp hoisin sauce
1 tbsp soy sauce

Combine broth, soy sauce, hoisin sauce, rice cooking wine, cornstarch and sugar and set aside.

Heat wok on high heat and add a tablespoon of olive or other cooking oil. Stir fry vegetables for a 3-4 minutes, remove vegetables. Add another tablespoon of oil to the wok on high heat. Add garlic and stir fry one minute, then add the chicken. Stir fry chicken until no longer pink. Add the broth mixture and let thicken a little, about 2 minutes. Add vegetables and cook for a few minutes, stirring to combine sauce, meat and vegies.

Serve over white rice. Yum!

Daves Omelet Italiano


Omgosh my hubby Dave made this for his breakfast this morn, I laughed when he told me it was his Omelet Italiano and went on to say how it has green peppers, tomatoes, onions and melted mozzerella cheese hehe.. thought Id show it off for him :D

Sour Cream Banana Bread Recipe #9351, Recipezaar

SERVES 12 , 1 loaf

1/2 cup margarine or butter
1 cup sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed banana (I used 2)
1/2 cup chopped nuts (omit if you don't like nuts)
1/2 cup sour cream

Grease 1 large loaf pan.
Cream margarine, sugar, eggs and vanilla.
Add dry ingredients, then bananas, nuts and sour cream.
Mix well.
Bake at 350 F for 1 hour (mine had to bake for 15 mins longer)
