Tater Tot Chicken Casserole
last night I wanted to make something quick and easy too.. what I did was this.. I had some precooked chicken, I cut it in bite size chunks and put it in the bottom of a greased 8x13 inch pan, seasoned with garlic powder, salt and pepper, could use whatever seasonings you like, on top of that toss a 1 lb bag of frozen vegetables, next time I am going to use broccoli, I didnt like the carrots in mine. Anyways.. mix 1 can cream of chicken soup with 1/2 to 3/4 C sour cream and spread that over the veggies evenly. Over that layer grate a layer of cheese.Top with 1 32 ounce bag of tater tots/rounds frozen. pop in the oven for 45-55 minutes or until tater tots are browned and it is all hot all the way through my family RAVED about this one, I was SOO happy and will make again, so easy to throw together, Carm

4 tsp. yeast
1/2 cup sugar
2 eggs
1/2 c. marg, softened
2 tsp. salt
7 cups flour, or as needed

Pour milk into a large mixing bowl, and sprinkle yeast over the surface. Allow to rest for 5 mins. Beat in the sugar, eggs, 1/2 c. marg, and salt; blend thoroughly. Gradually stir in the flour to make a soft dough. Cover bowl, and set in a warm place until dough doubles in size, about 1 hour.
Punch down the dough, cover the bowl, and allow to rise again. Repeat this step two more times.
Break off 2-3 inch size pieces of dough, roll lightly into round shape, and place in prepared baking dish, edges touching. Repeat to make 36 dough balls. Cover and let rise until doubled in size.

Fry sauce I LOVE it, nuttin is better with fries and on burgers BUT when I went to school in California back in 86 I asked for fry sauce and my cousin looked at me like I was A NUTCASE lol.. This particular fry sauce is from Astro Burger..dang I love their food hehe.. my fat belly proves it
To try your own here is a recipe
2/3 C mayo
1/3 C ketchup
to add a little zip try adding a splash of pickle juice or lemon juice. Also I hear worcestershire sauce or A-1 sauce are tasty..how about a little horseradish or even bbq sauce. try it you will like it

Cinco De Mayo
We had a bbq tonight Yum! Hubby grilled the steaks and I made the potato salad and the guacamole. The guacamole I make is really easy, smash up some ripe avocados, dice some tomatoes and throw them in, then salt and lemon juice to taste. I dont use onion or salsa in mine, I like to taste the avocados
Grandmas Potato Salad
I dont really have a recipe for this, I kinda just do it by memory, I boil my potatoes, peel and dice them, add boiled eggs that have been cut up. Chopped Onion (I chop mine very fine so I dont get big pieces in any bites lol, I love the flavor but not a big chunk) Chopped celery. Then I add mayo and a few splashes of red wine vinegar, dont forget your salt and pepper. Top with paprika to make it puuurty and let it sit in the fridge for a few hours so flavors can meld <----did I use that right lol
