Ham and Bean Soup


Hubby and I wanted to try some Ham and Bean soup in the crockpot so we basically made up our own recipe. I put 8 C water in my slowcooker, added 2 C of pinto beans (next time I will add at least 3 maybe 4) We put in the Ham bone with a little meat on it from Christmas and also a whole onion chopped up. Cooked that for several hours and when the beans started to get soft we added salt and pepper, a little thyme and garlic powder, and some more chunks of ham..simmered some more, when beans were mostly done we added 1 28 oz can of whole tomatoes chopped up (we leave big chunks lol)and also a can of tomato paste, turned out really good. We were quite pleased with ourselves :D
I think next time I will add in some chopped celery or carrots too. I think it took about 6-8 hours cant remember exactly

Ham and Cheese Stromboli

Ham and Cheese Stromboli (TO TRY SOON)



INGREDIENTS


• 1 tube crusty french bread, refrigerated
• 2 cup(s) mozzarella cheese, shredded
• 1/4 lb deli ham
• 1 tbsp butter, melted
• 1 tbsp parmesan cheese, grated


DIRECTIONS
1. Unroll dough and shape into 12 X 14 inch rectangle.
2. Sprinkle mozzarella over dough. Top cheese with ham.
3. Roll tightly from the short side and pinch to seal. Brush with butter and sprinkle with Parmesan cheese.
4. Bake at 375 degrees for 25 minutes. Cool for 5 minutes and slice.

Note: Fill this pretty sandwich with anything your family likes. Try swiss and bacon or provolone and sliced pepperoni.

Yeast Rolls

Cathy and Randy THANK you soo much for this fabulous recipe. I will be making these from now on as my main roll recipe, they are just SOO good.
Yeast Rolls

Cathy Hogan

1 cup water

¾ cup sugar

2 pkg dry yeast

3 eggs

½ cup butter

5 ½ cups flour

1 teaspoon salt

1 stick butter, melted

1. Mix together 3 cups flour, yeast, sugar and salt.
2. Warm water and ½ cup butter on stove, remove when very warm, but not boiling.
3. Beat eggs and add to water.
4. Add to flour mixture with mixer.
5. Add remaining flour with spoon.
6. Heat oven to warm, turn off, or cover in warm room.
7. Put dough in and let rise until double in size.
8. Punch down and divide into 3 equal parts.
9. Roll each into a circle, about 12-14 inches, brush with melted butter, and cut into 12 equal pieces with a pizza cutter.

10. Roll each piece and put into buttered 8 inch cake pan.

11. Let rise again in warm oven or room until double in size.

12. Bake @ 350* for 10-15 minutes. Brush tops with melted

butter.

Hamburger Soup Ohh Myy



Hubby isnt a fan of soup really , he seems to think its not filling and more of a side dish..well I proved him wrong tonight with this YUMMOLA soup. you MUST try it, heck add some potatoes for more body if you want. I did add a 28 oz can of whole tomatoes which I chopped up, liquid in too :D soo good omgosh let me know if you try it and how you like it. My carrots were frozen from the freezer, so easy to add in.

Hamburger Soup

1 1/2 to 2 lb ground beef
1/2 t salt
1/4 t pepper
1/4 t oregano
1/4 t basil
1/8 t seasoning salt/lawrys
1 pkg dry onion soup mix
6 C hot water
1 8oz can tomato sauce
1 Tablespoon Soy sauce
1 C celery chopped
1/4 C celery leaves
1 C carrot (I used frozen)
1 C macaroni
I also added a 28 oz can of whole tomatoes that i cut up YUM


Brown meat and add all spices
add water, tomato sauce and soy sauce
Cover and simmer for 15 mins
then add veggies and simmer 30 more mins..

then add macaroni and boil about 20-30 more mins til noodles are done.. k...EASY right ? Yep Go try it and let me know how it turns out :D

Anthonys Home Fries


YUM I only had green peppers but these were SO tasty, I didnt boil my potatoes, I washed them, poked them with a knife a few times and put them in a plastic shopping bag then into the microwave for 10-15 mins til mostly cooked, I left the peels on as you can see in the pic

RECIPE INGREDIENTS
4 large Idaho potatoes, peeled and quartered
2 tablespoons unsalted butter
1 tablespoon vegetable oil
1 medium onion, coarsely chopped
1/2 medium red bell pepper, coarsely chopped
1/2 medium green bell pepper, coarsely chopped
Salt and freshly ground black pepper
Hot-pepper sauce, for serving

RECIPE METHOD
Bring a large saucepan of salted water to a boil. Add the potatoes and cook until just tender, about 15 minutes. Drain and coarsely chop the potatoes.
In a large heavy skillet, preferably cast iron, melt 1 tablespoon of the butter in the vegetable oil. Add the onion and red and green peppers and cook over moderately high heat, stirring, until wilted, about 4 minutes. Mix in the potatoes and press into an even layer in the skillet. Cook over moderate heat until browned and crusty on the bottom, about 5 minutes. Season with salt and pepper. Turn the potatoes, adding the remaining 1 tablespoon butter to the skillet as you turn, and cook until well browned, about 5 more minutes. Season with salt and pepper and serve with hot sauce.

Kitchen Sink Cookies

these are delicious and I made some up and froze them for Christmas , I used choc chips, coconut and walnuts in mine perfectly yummy

INGREDIENTS

* 1 cup butter, softened
* 2 cups packed brown sugar
* 2 eggs
* 2 teaspoons vanilla extract
* 2 1/3 cups all-purpose flour
* 1 teaspoon baking soda
* 1 teaspoon salt
* 2 cups rolled oats
* 1 cup semisweet chocolate chips
* 1 cup vanilla baking chips
* 1/2 cup butterscotch chips
* 1 cup chopped pecans


DIRECTIONS

1. Preheat the oven to 375 degrees F (190 degrees C).
2. In a large bowl, cream together the butter and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda and salt; stir into the creamed mixture. Mix in the oats, chocolate chips, vanilla chips, butterscotch chips and chopped pecans. Drop by tablespoonfuls onto ungreased cookie sheets. Cookies should be at least 2 inches apart.
3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Turkey Pot Pie

omgoodness was this good, I actually made 2 and we are eating the second one tonight. Rave reviews from Hubby and Daughter Yayyy. I didnt use celery because I was out, I also left the peels on the potatoes. YUUMMMOOO

INGREDIENTS

  • 1 recipe pastry for a (10 inch) double crust pie
  • 4 tablespoons butter
  • 1 small onion, minced
  • 2 stalks celery, chopped
  • 2 carrots, diced
  • 3 tablespoons dried parsley
  • 1 teaspoon dried oregano
  • salt and pepper to taste
  • 2 cubes chicken bouillon
  • 2 cups water
  • 3 potatoes, peeled and cubed
  • 1 1/2 cups cooked turkey, cubed
  • 3 tablespoons all-purpose flour
  • 1/2 cup milk

DIRECTIONS

  1. Preheat oven to 425 degrees F (220 degrees C). Roll out bottom pie crust and place in the 10 inch pie pan and set aside.
  2. Place 2 tablespoons of the butter in a large skillet. Add the onion, celery, carrots, parsley, oregano, salt and pepper. Cook and stir until the vegetables are soft. Stir in the bouillon and water. Bring mixture to a boil. Stir in the potatoes, and cook until tender but still firm.
  3. In a medium saucepan, melt the remaining 2 tablespoons butter. Stir in the turkey and flour. Add the milk, and heat through. Stir the turkey mixture into the vegetable mixture, and cook until thickened. Pour mixture into the unbaked pie shell. Roll out the top crust, and place on top of filling. Flute edges, and make 4 slits in the top crust to let out steam.
  4. Bake in the preheated oven for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and continue baking for 20 minutes, or until crust is golden brown.

Happy Thanksgiving

Cool Whip Jello Salad

Happy Thanksgiving everyone, hope you are having a great day, I wanted to post a recipe that we make every year, I usually have one of my kids make it because it is so easy.  1 8oz container cool whip topping 1 3oz jello (we use lime) 1 20oz can pineapple chunks-drained 1 16oz container cottage cheese  mix and refrigerate till set up.. omgosh its not too puurty but it is SOO yummy

Pioneer Womans Biscuits


OH MY you must try these biscuits. I have NEVER made a good biscuit until now I got the recipe at the Pioneer Woman Can Cook Blog

First off I didnt have any buttermilk so I had to use the milk/lemon juice substitution, also I used margarine because we were out of butter , still FABULOUS omgosh they are HUGE.

FOOD GUY'S WIFE'S OVEN FRIED CHICKEN

I cooked my chicken too long and it was dry :( I will try this again and cook it for 50 mins instead of the full hour. It is very tasty though I really like the seasoning on the chicken, the gravy is yummy too :D Yep, I will make this again


INGREDIENTS

DIRECTIONS

  1. Wash chicken, and pat dry with paper towel. (My wife soaks the washed chicken in salt water for 15 20 minutes).
  2. Preheat oven to 425º.
  3. Place vegetable oil and margarine in shallow baking pan, and set in oven to heat and melt.
  4. Combine flour and seasonings. Roll chicken pieces in flour mixture.
  5. Remove hot pan from oven and arrange chicken pieces on it, skin side down, do not crowd.
  6. Place in oven and bake for 30 minutes. Turn chicken so that skin side is up and continue baking-20-30 minutes until nicely browned and juices run clear.
  7. Remove to a platter and keep warm (at least 10 minutes).
  8. Country Gravy....
  9. Scrape baking pan and place 3 Tablespoons of the accumulated cooking fat and browned bits into a sauce pan. Stir in 3 Tablespoons flour and cook 1-2 minutes until well combined. Stir in 2 cups milk and continue cooking and whisking until gravy boils and thickens. Cook about one minute. Season with salt and pepper if necessary.

INGREDIENTS (Nutrition)

DIRECTIONS

  1. Preheat the oven to 375 degrees F (190 degrees C). Sift together the flour, baking powder, baking soda and salt; set aside.
  2. In a large bowl, cream together the butter, brown sugar and white sugar. Beat in the egg then stir in the vanilla. Gradually mix in the dry ingredients. Mix in the chocolate chips, coconut and pecans. Roll dough into 1 inch balls and place the cookies 2 inches apart onto ungreased cookie sheets.
  3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 2 minutes before removing to a wire rack to cool completely.

King Ranch Casserole

made this tonight and it was DELICIOUS BUT isnt very pretty to look at. Next time I will use chicken instead of ground beef. SOO yummy!

INGREDIENTS:

* 10 3/4 oz cream of Mush
* 10 3/4 oz cream of Chicken
* 10 oz diced tomatoes w/ green chilies
* 1 small can black olives (OPT)
* 1 8oz soften Cream Cheese
* 2 lbs Ground Beef or( 2 C. Chicken-precooked)
* 12 Corn Tortillas, broken to fit pan
* 2 C shredded cheese
* salt,pepper,garlic powder season meat to taste

DIRECTIONS:

Preheat oven 350F. Lightly mist 9×13 casserole dish with non-stick cooking spray. Brown meat add seasoning’s (of choice) , drains excess grease. Add Cream of chicken, cream of mushroom, Diced tomatoes w/ green chilies and cream cheese. (I cube the cream cheese)

Use 1/2 the tortillas tear and layer bottom of dish until covered, add all meat & soup mixture, take other half of tortillas, tear in pieces and place on top of meat mixture, until covered. Top with Cheese & olives. Bake 30 - 45 mins.

Grandma Ople's Apple Pie

INGREDIENTS

* 1 recipe pastry for a 9 inch double crust pie
* 1/2 cup unsalted butter
* 3 tablespoons all-purpose flour
* 1/2 cup white sugar
* 1/2 cup packed brown sugar
* 1/4 cup water
* 8 Granny Smith apples - peeled, cored and sliced



DIRECTIONS

1. Melt butter in a sauce pan. Stir in flour to form a paste. Add white sugar, brown sugar and water; bring to a boil. Reduce temperature, and simmer 5 minutes.
2. Meanwhile, place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work of crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
3. Bake 15 minutes at 425 degrees F (220 degrees C). Reduce the temperature to 350 degrees F (175 degrees C), and continue baking for 35 to 45 minutes.

Easy Pie Crust




This is the pie crust I use most often because its really easy :D

2 C flour
1 teaspoon salt ..mix these together and remove 1/3 C of the mixture to another small bowl. Mix 1/3 C cold water in with the 1/3 C flour salt mixture to make a paste.

Now to the rest of the big bowl of flour add 2/3 C shortening and using a fork or pastry blender mix in the shortening until you get like pea sized chunks..photo 2

Mix the paste you made into the big bowl and mix in.. waalaaahh.. done

now wrap in plastic wrap and put in fridge til your ready to use it. Im sure you could also freeze it but Ive never tried.

The recipe says not to double it, not sure why?

Daves Au Gratin Potatoes

Oatmeal Coconut Pecan bars

Before Baking

Oatmeal Coconut Pecan Bars

1 cup rolled oats
1/2 cup flour
1/2 cup brown sugar
1/2 cup chocolate chips
1/2 cup unsweetened shredded coconut
1/4 cup chopped pecans
1/4 tsp baking powder
1/4 tsp salt
5 tbsp unsalted butter, melted and slightly cooled
1 egg
1 tsp vanilla

Preheat oven to 350F. Combine all the dry ingredients (oats through salt) in a large bowl. In a smaller bowl, mix together the melted butter, egg and vanilla. Dump the wet ingredients into the dry and mix until well blended. Oil up an 8x8 pan and pour mixture in, patting the top flat with your hands while making sure the mixture gets into the corners. Bake for 25 minutes and cool. Cut into squares.

INGREDIENTS

* 9 potatoes, peeled and cubed
* 6 ounces cream cheese
* 1 cup sour cream
* 2 teaspoons onion powder
* 1 teaspoon salt
* 1/4 teaspoon ground black pepper
* 2 tablespoons butter

DIRECTIONS

1. Bring a large pot of salted water to a boil. Drop in potatoes, and cook until tender but still firm, about 15 minutes.
2. Transfer potatoes to a large bowl, and mash until smooth. Mix in the cream cheese, sour cream, onion powder, salt, pepper and butter. Cover, and refrigerate 8 hours, or overnight.
3. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
4. Spread potato mixture into the prepared baking dish, and bake in the preheated oven about 30 minutes.
