*This recipe feeds as many as you make patties for Heat one or two tablespoons of oil in a large nonstick skillet. Fried Chicken
We mixed 4 eggs with about about 1/2 C or so of Jake's hot sauce and mixed that is your egg batter
Flour mixture, I mixed about 2 C flour and added some red pepper flakes, some cayenne pepper and some Paula Deen's Seasoning Ill leave the recipe for that
First salt and pepper your chicken pieces and let them sit in the fridge for a few hours or overnight. Dredge your chicken pieces first in flour, then in the egg mixture , then back in the flour
fry in hot oil , (fill your pan no more than halfway full of oil or it may run over when you add in your chicken)
fry until the juices run clear and let sit on paper towels or newspaper until cool enough to eat

Notes: I didnt have bacon so I used some bacon fat to cook the onions and garlic in, Also I added in a bag of frozen mixed veggies at the end because we wanted more veggies. SOOo good and filling. I will definitely make this again and again. Ohh forgot to say and so EASY it is :)
Ohh I cooked my potatoes in the chicken broth til tender, I didnt have any baked
INGREDIENTS
- 3 bacon strips, diced
- 1 small onion, chopped
- 1 clove garlic, minced
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- 1 teaspoon dried basil ( I used half this amt)
- 1/2 teaspoon pepper
- 3 cups chicken broth
- 2 large baked potatoes, peeled and cubed
- 1 cup half-and-half cream
- 1/2 teaspoon hot pepper sauce
- Shredded Cheddar cheese
- Minced fresh parsley
DIRECTIONS
- In a large saucepan, cook bacon until crisp. Drain, reserving 1 tablespoon drippings. Set bacon aside. Saute onion and garlic in the drippings until tender. Stir in flour, salt, basil and pepper; mix well. Gradually add broth. Bring to boil; boil and stir for 2 minutes. Add the potatoes, cream and hot pepper sauce; heat through but do not boil. Garnish with bacon, cheese and parsley.

Crazy Crust Taco Pie
Crazy Crust Taco Pie
Filling:
1 lb ground beef
1 t salt
2 t chili powder
1/4 to 1/2 t tabasco sauce
1/2 C chopped onion
1 16 oz can kidney beans
1 6 oz can tomato sauce
Brown meat and and onion together. Add other ingredients and simmer.
Crazy Crust:
1/2 C flour
1/2 t salt
1/2 t baking powder
1/4 C shortening
1/2 C sour cream
1 egg
Lightly grease and flour the bottom and sides of a 9 inch pie plate. Combine ingredients and stir 60 to 70 strokes (batter will be lumpy).
Spread batter thinly in bottom and thick on sides of the pie pan within 1/4 inch of pan rim. Fill with hamburger mixture and bake at 425 degrees for 20-30 minutes.
After baked top with lettuce, tomatoes, cheese etc.. just like a taco

Shepherds Pie
1- 1 1/2 lbs ground beef
1/2 - 1 med onion chopped
2 cans tomato soup
2 cans green beans drained
pre made mashed potatoes instant or real
grated cheese
salt
pepper
brown your ground beef and chopped onions together, drain and add 2 cans tomato soup, drain your green beans and add in, stir it all together and salt and pepper. Pour into a 13x9 inch pan and cover with mashed potatoes, they grate cheese over all. Cook at 350 degrees for about 30 minutes or until hot all the way through, YUMMY and EASY

Enchilada Casserole
This isnt really a recipe but rather something I whip up now and again for my family, I brown about 1 1/2 lbs of ground beef with some chopped onions, I season with salt,pepper, and some garlic powder. set aside, then in another bowl grate a big ol bowl of cheese (i love cheese lol) Then I take a 29.2 oz can of Rosarita mild enchilada sauce and spread a little in the bottom of a 13x9 inch casserole dish, layer on top of that 6 corn tortillas one in each corner and 2 in the middle, spread a little sauce, some meat mixure, then cheese, then another layer of tortillas, meat, cheese and top with one last layer so you have 3 in all, the top will have sauce, meat then cheese. I like to add sauce here and there and on some of the cheese between layers just because I dont like dry spots lol, Bake at 350 for about 25-30 mins or til it is heated through, VERY tasty..it does tend to get a little soggy in there from all the sauce on the tortillas, but no one in my family minds it, if you dont like a little sogginess you may not want to try this one. My hubby gags at soggy things but can still eat this casserole. MUCH easier than rolling them or doing the stack method although I used to do the stacking style, maybe I should post that one too later :D

guacamole/sour cream/salsa/chopped olives or any other toppings.
Put down some fritos first

top with your choice of extra sauces or toppings. Can make taco bar style so everyone can make their own plate

Easy Rigatoni
Brown your ground beef, drain and add spaghetti sauce. Put Aside. Boil your rigatoni according to package directions, drain. Add a little of the sauce in the bottom of your 9x13 in pan, then half your rigatoni noodles, on top add a layer of cottage cheese, grated cheddar cheese, them a 4 oz can of drained chopped mushrooms. More sauce, rigatoni, cottage cheese, More sauce then grated cheddar cheese on top. bake at 350 for 30 minutes or til heated through.
